When we cooked the brisket, I divided it up, vacuum sealed it and froze a lot of it but we kept out a lot. We’ve had brisket lots of ways! I made burnt ends with some of the fatty portion of the point portion. Vince swore he’d never had burnt ends, though I’ve made them before, and he further swore that he wanted to use an entire brisket to make lots of burnt ends. No! Not gonna work. The point is the best part for burnt ends.
Last night, because I had eaten lunch late, I didn’t think I was going to eat dinner but then decided I wanted dinner so I fixed a bowl with chopped brisket, avocado, tomatoes and cheese . . yummy!
This morning, I said “I think I’ll make brisket omelettes. Vince said NO! So, he missed out. He had a ham, cheese, pepper and onion omelette but I had a brisket omelette and it was delicious!
I used peppers, onions, brisket and pepperjack cheese.
Definitely something I’ll have for breakfast again but not any time this week . . we’ve finally finished the package of brisket that I kept out from freezing. There’s plenty more in the freezer but there are other things to eat this week.
