Migas is probably my most favorite breakfast. But, you know how I am – whatever we have tomorrow will be my REAL favorite! The best thing about migas is that Vince wants NO cilantro so I get it all on my plate. I had mentioned the other day that we had Migas at a local restaurant and were very disappointed. As we were eating this, Vince said “Why do we ever go out to eat?” I really don’t know. It’s pretty rare that we leave a restaurant thinking that was really good! And, it’s so much less expensive to eat at home. And, I don’t have to get dressed in clothes with no holes!
I think it’s settled – we’ll never eat out again. Getting off subject, which so rarely happens for me <G>, this is why I don’t mind buying things like the Harvest Right freeze dryer, or nice gizmos for the kitchen. We really do save so much by eating at home, growing some of our food, shopping for bargains and stocking up when we do find those bargains. I don’t think it’s a matter of how much you spend but how you spend what you have. There are probably readers who would love a freeze dryer but wouldn’t spend the money but don’t mind plopping down $100 or more for a dinner out. We’re all different and that’s what makes life fun and interesting.
Back to my migas.
Basically, you can use Pioneer Woman’s Migas recipe. I do a few things differently and I’ll list those below. It seems like a lot of trouble to make but once you get everything chopped, it’s a piece of cake.
Sometimes I use chorizo but once I looked at the ingredients and now I have a hard time using chorizo. There are different types so if you care what’s in it, read the ingredients. If you don’t care, don’t EVER look! 🙂
I’ll almost always add bacon or ham.
Look at the purple bell pepper out of my garden! Actually, the jalapeno and onion came from my garden too. Oh .. the tomatoes and cilantro too. And you know where the eggs came from!
Here’s what I do differently from PW’s recipe:
- I cut my tortillas into little squares before I fry them. It probably doesn’t matter.
- I add meat – bacon or ham usually.
- I cook the bacon, take it out and crumble it. Then I add the veggies to the bacon grease and saute them. Then I add the eggs on top of the veggies and when the eggs are almost done, I toss in the tomatoes, tortilla chips, bacon and cheese.
Once that’s all mixed up, then I add the cheese.
Then . . we eat!

I looked at the chorizo ingredients a few years ago and that was the end of that.
I will look for my homemade chirizo recipe and send it to you (no lymph glands necessary ).

We eat out way more than I would like because hubby thinks he is giving me a break. I would rather eat cereal than go some of the places he suggests and cereal isn’t my favorite.

I’ve actually come to like cereal and it works great for when Vince wants something to eat NOW and dinner isn’t scheduled for another 2 hours. Sometimes he’ll fix himself a sandwich and then he isn’t hungry when it’s time for me to fix dinner so I just eat a bowl of cereal. There are a lot of cereals I don’t like but I love the red berries . . can’t remember the real brand but we buy the Aldi brand.
Just like your hubby, Vince thinks he’s doing me a favor when we go out to eat and I’ve gotten to where I’ll say “I’d rather not” and he’ll usually say “I didn’t really want to go but I was trying to do you a favor.”

I never heard of migas, so was interested when you said you’d add your recipe. Won’t work at my house. Hubby won’t eat anything with any kind of veggies cooked in…. And yes, I would absolutely LOVE the freeze dryer. I’ve looked at that same brand for years, but will never be able to come up with the money for it, so I’ll just continue to dream about it. I’d probably die before paying $100 for a meal. I’ve about had a heart attack when the bill was over $50, and that was for 4 of us plus a two-year-old. (I’m usually very frugal because of having to be when we were raising the kids.) I’m excited to hear what you think of the freeze dryer when it arrives.

My son actually did a little research and there is a gene that some people have (we all have it) that makes cilantro taste like soap. He can detect one tiny piece. So, I think that’s why some people love cilantro and some hate it. Ask Vince if it tastes like soap to him…
