When I posted about the salads, some of you were apprehensive about the freshness of the lettuce after a few days. I actually made the salads on 6/10 so it’s been 5 days. I opened a jar this afternoon for our dinner.
That’s the entire contents of one quart jar. I have it packed in there pretty good. I dumped it for a picture but then I put half of it back in the jar for tomorrow.
I resealed the jar using the same lid and the lettuce will stay fresh for probably four or five more days but we’ll use it tomorrow. Without the lettuce being packed down, it almost fills the jar.
You can see that half the contents of the jar made plenty for two salads.

We also had Beef & Broccoli over rice . . both the beef/broccoli and rice were cooked in the pressure cookers. It was a great dinner. Vince loved it and there’s some leftover for freezing to try in the freeze dryer.

Thank you! I had heard about salad in a jar but all the recipes I saw were for recipes that didn’t have lettuce. I like my salads like yours but I wasn’t sure how it would hold up in the refrigerator. I didn’t want to buy the Mason jars and then find that this system didn’t work for lettuce. I have everything else, now I just need to pick up some Mason jars. Hopefully Goodwill will have some and I can save even more money!!! Thank for your excellent tutorial from way back in 2011! Can’t wait to be eating more salads and now I can since I can make them once a week and enjoy them all week!
