One of my purple potato vines was dying so I went ahead and pulled it out. It had three little purple potatoes!
If the potatoes had been ready to come up, they would have been totally bright purple all the way through to the insides. I sliced one up and cooked it to see if it turned white after being cooked and it didn’t. It stayed purple. I hope at least a few of the remaining purple potato plants make it to maturity so I can send a purple potato to Addie.
Everything, including the potatoes, were way late getting planted this year so it’s not going to be a great garden but . . we gave it our best shot and hopefully we’ll do better next year.

Pretty colour. Did you by any chance try tasting it and if so did it taste any different?

Well you have to admit you had some interruptions during that time that could not be helped. I think you did good to get what you have now with all the problems you both had earlier. So glad things are better!!

Purple potatoes grow really well in NC. They thought they would be a big hit and several farmers got into it in a big way and formed a co-op. Don’t think they found a demand for it and ended up dumping tons of them and I really have not heard anything about then since then.
