Back to our Monday – Thursday meal plans. At least one day during the week, we end up eating out or eating something not on the plan so that’s why I do only a four day plan. Weekends, if I have my way, are for grilling, smoking or scrounging!
This week, I opened the freezer and grabbed the first few meats I saw, stuck them in the fridge to defrost an am having them in the order of first things to defrost! I think the only things I needed to buy was fresh broccoli, salad ingredients and a can of cannellini beans.
One item near the front of the freezer was a fairly large beef roast. I know that if I cook that whole thing, some of it will get tossed so I’m dividing it. I’ll cook two-thirds of it as a pot roast and that will give us enough to make roast beef/potato hash and have roast beef sandwiches.

I enjoy your menus as I get in a rut. The spices in this pasta dish and the sumac in a Past salad sound so good but I did not find them locally. The cost of them online is high when planning a new dish for two people especially when one is a black pepper very traditional eater. Where did you find the spices in a manageable amount? I would probably love the spices but a $10 bottle is not something I want populating an already crowded cabinet. Thanks for posting menus and adventures of Judy-in -Texas and Vince. These sound good! They also sound healthy. This week, I thawed the bean soup that went into the freezer a while back, and it was nice to have something I didn’t have to cook again!
