Saturday morning is the morning we usually allow ourselves to have something besides oatmeal and turkey bacon for breakfast. This morning Vince said he wanted an omelette. Available ingredients began running through my mind. We had turkey bacon, eggs, cheese and onions. No ham, no peppers. There was leftover chicken in the fridge and several cans of artichoke hearts in the pantry. I came across those during my massive pantry clean up yesterday.
Not our usual omelette ingredients but it worked and helped use up some of the things we needed to use.
Doesn’t look half bad, does it?

I have been very impressed with how my husband has been so aware of cutting down his sodium and his caffeine. The hardest thing for him tho – ham and salami. He loves ham and salami.

Looks good to me, and I think I’ll go make an omelet for lunch! I always have eggs and freeze-dried onions, celery, red and green peppers, and that sounds like it will work just fine. =) Thanks for the temptation!

It looks good enough that I’m glad I made something yummy before seeing it. I made a white bean “shakshuka” today. I’m really enjoying vegetable-forward meals.
