You already know that I love my daughter-in-law and think she’s the absolute perfect addition to our family. I love how she and Chad get along. I love how they raise Addie. I love that she will go along with anything . . at least once. She will try anything. I’ve never known her to be unwilling to try something new, whether it’s sewing, knitting, cooking, a new food. She’s a real sport!
Yesterday was their first day of vacation in Louisiana and she posted this picture.
I thought of how many people who don’t grow up with crawfish and would never try them, and definitely not fall in love with them. Nicole said “I wish you could come! I think we’re going to be able to have the two more times before we leave!” She loves crab. She loves crawfish and, of course, Addie loves those things too because she’s grown up with them.
This morning Nicole called me and said “How do I make a roux?” They had boiled a chicken last night and she had already sauteed the veggies for a gumbo. Chad usually makes it but he was out fishing. I thought . . how many people would not attempt to make a roux for the first time . . without someone there holding her hand. I explained it to her and after a while, she called me back and said “I think it’s dark enough. Can we video chat so you can help me get it right?”
We video chatted while she kept stirring her roux. When I told her it looked like it was close enough, she said she was going to text Chad a picture of it. His response was “Well, look at you!” I wrote her back to see how it turned out.
I love so much about Nicole and I definitely love that she’s not afraid to try anything. She could have waited for Chad to get in from fishing and let him make the roux but she wasn’t afraid to try it, with just a little reassurance from “that lady who knits!”

She does just sound like a wonderful girl!! Good mom & wife, dtr, grand dtr, dtr in law, sister. Chad found a great one. She just sounds adorable.

Her roux looks beautiful! A friend from Lake Charles lived out here in the late 1970s and taught me and I’m so glad she did! I don’t make gumbo as often as I did; guess I don’t like standing over the stove as much as I once did, but I sure like gumbo the way she taught me (with a “no” on okra, though I do like that when it’s fried). I hope that one day when my son marries, that I’ll love my d-i-l as much as you do Nicole.
