How’s this for a healthy dinner?
A little tuna salad, a little whole grain/kale salad, a few cherry tomatoes, a couple of slices of apple, a few strawberries, and cucumber slices. Quite tasty. We’ll be having a whole lot of these kinds of dinners in the summer when it’s hot!

It was a box mix from Aldi and I made it a couple of days ago so I don’t even remember what kind of grain it is. This particular one has a little bit more oregano than I like but Vince loves it.

I’m thinking I eat too much. LOL If I had that plate, there would probably be twice as much fruit and tuna salad, only it would be chicken salad. The grains and kale looks about right, and the tomatoes. I might add a bit of cheese. Thanks for the tip that it’s a salad from Aldi’s. I’ll have to look for that, because I like grain and rice salad things.

That looks delicious, but my DH would not like anything but the fruit and then have to have something else – meat or pasta .

Looks yummy to me! I love to have blackeyed peas, cantaloupe, and boiled okra. Serve it with cornbread, yum!

Judy, we are each eating a whole, small apple. Is that too much? Will check Aldi’s mixes, thanks for the heads up! Are strawberries good there already? As you know, paying close attention here. I have found a recipe for quinoa that I think I can serve, finally! Hopefully!
