Corned beef would not be the best choice for a low sodium meal but we bought it before the heart issues started, we both love it so we had a small amount for lunch.
I soaked the corned beef in water and dumped/refreshed the water several times, hoping to draw out some of the salt. Then, I didn’t salt the cabbage at all – added some Mrs. Dash, a bit of pepper, onions, and onion powder. Then I shredded the corned beef and added it to the cabbage, hoping to transfer some of the salty taste from the meat to the cabbage without having to add additional salt. It worked. We didn’t need to add any additional salt.
According to the chart I’m using, a 3 oz. serving of corned beef has about 900 mg. of sodium so today will be on the higher limits of our sodium intake.
Breakfast was oatmeal with mango. No sodium in oatmeal, 3 mg in a whole mango so I’ll count us each having 2 mg. We had 2 slices of turkey bacon so that’s 270 mg. I’m going to count 12 mg of sodium for the cabbage. For the rest of the day, we’ll have an apple or an orange, or maybe both so I’m counting our sodium content for today at 917 mg of sodium. Not bad for a really yummy meal . . every once in a while!
For those worried, the minimum healthy amount of sodium per day is 500 mg so I’m not worried about us having 1,187 mg. I had an extra 55 mg because I had a Dr. Pepper . . just one!

Vince should be losing some more weight. All this weight was water buildup in his body when his heart wasn’t working good. That is why my hubby(aka dh) lost 30 lbs in one week. Now watch for leg cramps due to loss of potassium and also might take one magazine day according to our cardio dr.

Oh My the other day we both had salmon. Today I just put corned beef in my slow cooker, and after reading this I added seasonings that you used. It’s my first time making one so I’m sure it will be good now. Thanks for sharing.
