A friend had surgery earlier this week and I told her I’d bring dinner for them today. Even though everything I made was easy, I spent the entire day in the kitchen. We delivered the food about 3 and I came home and took a one hour nap.
I made two of the Five Flavor Pound Cakes. The recipe makes a bit much for the decorative Bundt pans so I made 1-1/2 times the recipe and made two cakes. That was the perfect amount to fill two cake pans.
They came out of the pans almost perfectly.
I made two loaves of bread, which also turned out pretty close to perfect!
For the main meal, I made Chicken, Broccoli, Rice casserole. I follow this recipe pretty closely but I add a can of Cream of Celery soup. I kinda doubled everything today. I used two quart jars of chicken I had canned, I pour some of the broth from the jar over the mixture, I use a little Pepper Jack cheese, and some Slap Ya Mama seasoning. Also, I pour the broth from one jar of chicken into the pot and add water to that for cooking the rice.
I also cooked up some andouille sausage. We ate some for lunch and I used some to season some green beans from last summer’s garden.
I ended up with enough chicken/broccoli casserole for a while. The black dish went to my friend. The two in front were vacuum sealed for the freezer. The one on the back left is what we had for dinner and there’s plenty for another meal. I love cooking ahead!
We like my cooking but I never know if someone else will. I hope they aren’t disappointed.

I would think I had died and gone to heaven if you brought me that food. I’ve been out of commission for 4 weeks now with a broken wrist from a fall and trying to tell hubby how to fix food or trying to do it one handed has been miserable. His idea of a good meal is a frozen dinner. Not mine!

I had back surgery in January and I can tell you that we have really appreciated all the food that folks bought to us!

Pretty sure there was no disappointment at your friend’s house!! It all looks fabulous and they’ll get a few meals from that. You vacuum seal right in your dishes or what they’ll be cooked in? I’ve seen people freeze, pop it out then vacuum seal (saves room maybe?).

Everything looks yummy! I’m sure your friend appreciated it. I know when I had rotator cuff surgery last year, even just taking something out of the microwave was difficult. All I really wanted to do was sit down and have someone put a plate in front of me. (And I love pound cake, so I really wouldn’t object if someone brought me that!) 🙂

I can almost guarantee they weren’t disappointed! Everything looks delicious, and I doubt you are the kind who mistakes sugar for salt or something else strange. If you liked it, they did, and I’m sure were grateful to have a meal that was ready and delicious.

I too always wonder if someone else would like my cooking as well as my family does. Sometimes that makes me hesitate to take a meal to someone who might need one. I’ll be trying your chicken broccoli casserole tomorrow night. It looks great.
