Late last night, while looking through the new patterns at Ravelry, I came across one called Eri. I love the sweater and I love the designer, Isabell Kraemer. But, the pattern is only available through Laine magazine. There are shops near Austin that sell the magazine and they might would maili me a copy but I had been chatting online with a friend who lives near Seattle and she’s suffering a bad bite from the knitting bug and I think she’s going to every shop in Seattle several times per week! 🙂
I wrote her and asked her if any of the shops listed in Washington are near her and she said yes so I asked her if she happens to see this magazine, will she get a copy for me and send it. She said yes! But, I don’t think the magazine is out yet. I wish I could subscribe to that magazine as it looks like a great publication.
As I was drooling over their designs, I saw their blog and that’s where I found this recipe for Nordic Pancakes. I fixed those for breakfast this morning and they were different – more like a crepe, but delicious. They were much lighter and not as “bready” as our traditional pancakes.
I didn’t have creme fraiche, which isn’t something I keep, but I did have yogurt so I added just a bit of honey.
I asked Vince if he liked this recipe and he said “YES!” I asked if he would want to eat this again and he said “Yes, tomorrow!” so I think that means this recipe is a keeper. By the way, I used ghee to fry the pancakes.

Mom used to use a Swedish pancake mix (Lund’s, I think). And, the topping was lingonberry jam. They are good.

I was looking at that pattern too! I was hoping that she would get the rights back at some point and it would be available online. Until then, I have a couple (hundred) other patterns in my favorites to keep me busy.

We call them Swedish pancakes and we just love them. Roll them up with fruit and whipped cream inside. Yummy!

The pancakes are so easy to make and even though the rest of the family uses syrup, I like mine rolled up with jam or just sprinkled with sugar. I use my mom’s Finnish recipe which isn’t written down but in my head.

They converted the milk but not the flour. Don’t know my math, what is 165 g equal to in cups? Any body know?

I looked it up and they said 3/4 c. This seems very little for all that milk, maybe Judy will tell us what she used.
