After making the Smothered Chicken earlier this week, I’ve been counting the days til I could make the recipe again and use pork cutlets. I didn’t want Vince to feel like he was having the same thing every day so I figured there had been enough meals between then and now so today I figured the same basic recipe and used pork cutlets.
Instead of serving over rice, today I added potatoes and carrots to the pot.
These pork cutlets are tender after frying so I knew they were going to be super tender after baking in this gravy.
It was delicious! I took a container of eggplant parmesan out of the freezer and heated that to go with it.
I know it isn’t good to have the same thing over and over but I could eat this dish every single day. I used two packs of cutlets so we have enough for a weekend meal. Yay . . yummy food with no cooking. I’ll probably steam some broccoli to go with it.
