One of my favorite meals is smothered chicken with gravy. I know what you’re thinking . . every meal is my favorite meal but anything with rice and gravy .. yum!
When we were in Louisiana, we ate at MamaReta’s Kitchen. She serves “soul food” and the day we were there, the special was smothered chicken, rice and gravy so I was happy. I’ve hardly stopped thinking about that meal since we left there. Last night I told Vince I was going to the freezer to get a chicken and he said “I know what you’re making!” He was right!
This is a very good recipe if you need a recipe. I highly recommend this, even for company.
I was able to use some of my fresh bay leaves!
Also, I made it very early, stuck it in the oven, covered, at 300° for a couple of hours, then turned it up to 365° for half an hour before it was time to serve. This would be very easy to fix for Sunday lunch and I think it’s good enough to serve when company is coming.

I’m so excited to try this!! I’m always looking for new chicken recipes. So many of them have cheese or some kind of cream in it and can’t eat dairy. This one looks sooo good!

I added a bit more spice to ours and I sometimes add carrots and potatoes before sticking it in the oven. I basically use this same recipe for hamburger steak and pork steak. If I can find a way to have gravy and serve it over rice, I’m happy.
