Chad was such a picky eater. The worst thing I remember of his eating habits was that he didn’t like the texture of cooked onions. He said they would “squeak” in his mouth. This wasn’t when he was 5 years old . . this was when he was 15, rather . . it was from the time he was 5 til he left our house at about 23. When I made gumbo, I honestly had to strain it for Chad. All he wanted was the liquid and meat. No onions. No celery. No peppers. I used to say “I feel sorry for your wife!” Nicole cooks to keep from starving but Chad loves to cook. With both of them working . . I was going to say he does most of the cooking but I can’t say that for sure and I definitely don’t want to get in hot water with Nicole. I can say that Chad makes some pretty extravagant things and Nicole is probably more of a “get it done and let’s eat” kind of cook.
Last night Chad called.
Chad: Mom, have you ever had Beef Wellington?
Me: I don’t think I have. I know what it is but I’ve never had it.
Chad: Have you ever had foie gras?
Me: No! And I doubt I would eat that.
He proceeded to tell me that he figured he would have to go to Kansas City if he wanted goose liver so he took a duck breast, boiled it with seasonings, put it in the food processor and made his own faux foie gras. He said it was really good.
Then he proceeded to tell me that he had plenty of venison tenderloin so he had “beef” wellington in the oven but it was made with venison tenderloin. I called him later and he said the bread part was starting to get brown and the meat was at 110°.

Does that look amazing? I want some! I would never have dreamed that he would be such a good cook . . but he is. He’s such a good son . . even if I do say so myself.

Looks amazing. Not sure if that is carrots or sweet potatoes, but they would be my favorite part o the meal.

If you had ever had foie gras there is no way duck breast would even be considered a substitute. It would be like acrylic yarn in place of wool yarn.

I didn’t notice a single onion on the plate. =) That does look good, but I wouldn’t want mine red – I’m well done all the way. =)

That does look delicious and I don’t like venison! Mike’s son Lonn is an extremely picky eater–he hates onions in any form. When I make something requiring onions, I chop them so incredibly fine or I put them in the blender–he never knows and loves my cooking! How the heck do you make spaghetti sauce, lasagna, gumbo, stew–without onions????
