Vince is not a cook. Vince knows where the silverware drawer is in the kitchen but otherwise . . he is lost in there. I’m happy with it that way. It’s a tiny kitchen, there aren’t room for two of us and I’m not much on sharing my stuff.
But, he makes absolutely the best salmon ever. Here’s a blog post about how he does it. Ughh! Just seeing the pictures of the old countertop in that 2012 post makes me so thankful for the new countertop.
Sunday Vince did all the prep work and I was going to smoke it but time got away from us so I left it in the fridge overnight, then smoked it Monday for lunch and it was so delicious.
Excuse the horrible picture! There were two big pieces and we had already consumed the first one and I thought . . oh, no! I didn’t take a picture!
Honestly folks, I’m not on the Aldi payroll but . . this salmon came from Aldi. Fresh, never frozen. We’ve always liked the salmon from Sam’s Club better than the salmon we get other places locally. The salmon from Aldi is the best. No fishy smell. Good texture. Even Vince, who likes Aldi but is not obsessed with it like I am, said “The is the best salmon we’ve gotten in a long time!”. True. It was so delicious.
I say I could eat smoked salmon every day but I’d probably get tired of it eventually. Maybe. Probably not! 🙂

looks delish! we don’t eat much fish, but my husband can smoke a mean turkey or chicken… don’t forget: tomorrow is the day to draw a new UFO#! can’t wait!
