How do you determine what to cook for your next meal? Around here, it seems to be whatever fell out of the freezer and I can’t manage to stuff it back in. When Vince and I had gone to Aldi Monday evening, we got home and my job was to put away the groceries. Actually, that’s pretty much always my job. Monday night that cold front was coming through so I was rushing to get everything put in the shop fridge and freezers so I could get back in the house. As I was putting stuff in, a package of Frenched Cut Rack of Lamb fell out and I stuck it in the fridge to cook this week so . . yesterday was the day. We usually grill these but it was way too cold for me to grill these outside so I had to find a recipe. I found this one – Rack of Lamb With Garlic and Herbs.
This is probably one of the best lamb dishes I’ve ever had . . for sure the best I’ve ever made. It’s quick. It’s easy and so long as your meat is good quality, I think it’s no fail. It’s so pretty – it would be a great recipe to serve guests. It called for fresh herbs but I only had fresh rosemary so I used dried thyme. I was too lazy to walk out to the greenhouse and get parsley so I used green onions which were already in the house.
There were two pieces in our package and we didn’t even eat all of one side for lunch so .. guess what we’re having today. That means . . more knitting time for me! 🙂

Yum! We had wonderful lamb in New Zealand when we lived there. This looks so good. What do you Serve with lamb? Do you serve mint jelly and if so do you make it or know of a good commercial one. What veggies do you put with it? Looking for something to spark up a winter plate.
