It seems that salmon is amazingly good for you and I rather like it. The other day at Aldi I bought a pack of “fresh, never frozen” salmon to smoke. I still haven’t tried out the cold smoker but then it got cold and I was thinking I’d freeze it or cook it in the house. Then a Southern Living magazine arrived and Vince was thumbing through it and found a recipe for salmon that was cooked in the oven – kinda roasted I guess. I’m not going to type the recipe here since it isn’t my recipe but I found it online and you can find it here.
Note: The first time I made the recipe, I used molasses as called for in the recipe but that was all I had so when I made the recipe today, I used sorghum and it tasted just about exactly the same.
It was just Sunday that I fixed salmon for lunch. Last night when we were out, Vince wanted to go by Aldi and see if they had more. They did. He said “Why don’t you fix this for lunch tomorrow?” Super quick, and good . . yes, I did fix it for lunch today and meant to take a picture and totally forgot. Must have been hungry! 🙂
If you halfway like salmon and if you like quick and easy . . you may want to try this recipe.
Here’s something funny. Aldi rarely has lobster tails but when they do . . they’re good and there are usually about 10 packs of two lobster tails. I steam them in the pressure cooker for 3 minutes. Talk about quick and good . . as far as lobsters we can get around here. Yesterday they had them. Vince said “Get a couple of packs.” I said “I usually get all they have.” But, I just got three packs. When we got to the checkout, the lady looked at me and said “You didn’t buy them all today!” Vince said “It’s probably bad when the Aldi lady knows your buying habits.” Bad or not . . I love Aldi so much! Another reason to stay here, right?

Are the lobster tails in the fresh or frozen part of Aldi? I haven’t seen them in our Aldi but I’ll look. I’ve never thought to try to cook lobster on my own but I have a pressure cooker and now I want to try it!

Ever since Aldi stopped carrying the dried coconut I was inhaling, I have been mad at them. I get tired of them not stocking something I love. They had these cheese crisps or puffs that were so good last year around this time. I started looking for them and sure enough, they had them again. I stocked up and have a drawer full of them. I do manage to find the coconut at CVS every once in awhile, but Aldi hasn’t had it in more than a year.

Ew, gross, salmon! HA I can’t stand the taste. One time we were at a hibachi place and I ordered steak. The chef cooked a piece of salmon and then cooked my steak right after the salmon. I knew I wouldn’t be able to eat it and, sure enough, I took one bite and all I could taste was salmon. He had to get a different piece of steak and cook it far away from the salmon spot. Stupid, I know.

Say Judy, we DO HAVE lots of Aldi stores in MO, so that’s not a good reason to stay in TX. Now the cold weather here might do it this week, though. lol 🙂 That salmon recipe sounds good. Thanks for the link.
