This morning I was up before 6 but I got busy doing one thing and then another – a bit of laundry but mostly knitting. It got to be about 10 a.m. and Vince was looking at me and I realized he was probably wanting some breakfast.
I rarely buy biscuit mix because it’s so easy to make, but mostly I make biscuits from scratch. I bought this Zatarain’s mix when we were in Louisiana and never used it so I figured this morning was a good time to get it out of my pantry. One grocery store here has Bulgarian buttermilk that I love but most other buttermilks that I buy are just too thin for my preference. The other day at Kroger I noticed buttermilk made from whole milk. Mostly it’s made from lowfat milk so I bought the whole milk buttermilk and it’s as thin, if not thinner than the lowfat buttermilk. Instead of using plain milk in the biscuits, I used some of that buttermilk . . just to help get rid of it. The biscuits were good but I still prefer to make my own.
We had eggs, bacon, biscuits and grits. For me it was worth the wait . . not sure how Vince felt about it. Having breakfast this late means that our next meal will be about 3 p.m. — leftover mac & cheese meatloaf, baked sweet potatoes and salad. The lazy cook rules this kitchen! 🙂

I do the same thing on the weekends most of the time. Feed the kids about 10-11 a big breakfast and then again about 4. I see nothing wrong with that!

Looks good to me. Now I have to think about macaroni and cheese meatloaf!

I keep plain yogurt in the frig and use it instead of buttermilk. I add milk, about half milk, half yogurt for me. You can make it as thick as you like. Also It subs for sour cream whrn I am baking.

Speaking of biscuits…My mother bought that exact biscuit mix Saturday, same day you posted this, at our Walmart. So, if its any good, Walmart might have some more of it. And, of more importance, I made sweet potato biscuits and they were really good. I don’t make biscuits, like ever and don’t eat them often, so maybe it was just nice having biscuits, but I thought they were great. Recipe is on my blog or you can google a recipe.
