We stopped and got donuts this morning after we got to Abilene. We went to an Italian place for lunch.
I had zero plans to cook dinner tonight.
Vince was outside doing something and he came in and we had this conversation:
Vince: How much trouble is it to fix fried rice?
Me: Not happening!
Vince: You can spend $50 on yarn if you make fried rice!
Me: I’m on it!
I quickly cooked rice in the pressure cooker. Chopped some carrots. Grabbed some peas out of the freezer.
I used the yellow bell pepper left in the fridge, onions, leftover pork chops, leftover ham, snow peas from the garden/freezer and fried some eggs. That was a super quick one pot meal.
That was a good deal for me and we have fried rice for probably another two or three meals. I wonder if I can pretend I think he’s allowing $50 for yarn each time I serve that rice! I also cooked enough rice for a soup I want to make tomorrow. Another $50! Win/win/win for me! 🙂

Vince, Vince, Vince, you could have saved yourself over $40 by running into town for fried rice! Probably not as good as Judy’s but whatever! You two crack me up.
