Not long ago . . just a couple of years ago, I used to get a long of comments about the amount of cooking I did . . Why do you cook so much? I never thought I cooked that much but . . I did . . and now I don’t. Sometimes I almost feel bad for Vince because I know he loves a good, home cooked meal but I just don’t have a lot of desire to be in the kitchen any more. Yesterday, I thought to myself . . if there’s award for the world’s laziest cook, I’d get it for sure.
On the days Vince is home, we have a late breakfast . . about 9 or 10 a.m., and then we have our next meal about 3 p.m. Yesterday morning, about 9, we had French toast and bacon for breakfast so it wasn’t a terribly big breakfast. Shortly after noon, I could see Vince was wanting to ask if I had plans for lunch. We’d already been through the . . do you want to go to town today? . . discussion and you know my answer to that so he wasn’t about to ask if I wanted to eat out.
I had absolutely nothing planned for lunch. I had leftover pork in the fridge. I had leftover eggplant that I will use to make eggplant parmesan. I had a couple of things in the freezer but nothing sounded great.
Tuna salad sandwiches was about to be my suggestion but I like having those for lunch on work days better than for lunch on weekends.
I happened to think about Chicken, Broccoli, Cheese casserole. It’s one of those throw it all together recipes and it doesn’t even matter if I have all the right ingredients or not.
I used chicken I had canned. I cooked rice in the pressure cooker. I had fresh broccoli in the fridge and I steamed that. I added a can of cream of chicken soup, a can of cream of mushroom soup, several kinds of cheeses that I had in the fridge a little of the broth from the chicken, seasonings . . baked it.
A few tomatoes, the end of the Watergate salad and we had a yummy, super quick meal!
No one around here seems to be starving but I surely don’t spend much time in the kitchen any more.

GOOD GRIEF! Are you KIDDING? Lazy cook, I don’t think so. I would get that award for most of my years. Now, I make a pot of soup, don’t like the taste and dump it down the disposer. It’s gotten to where I don’t want to subject anyone to my cooking as it’s not good. So Judy, you’re definitely GOOD in the cooking dept.

BTW I now have two pressure cookers going Judy.. Instapot lol …

So funny, I just made that a few days ago and finished off the last of it Saturday for lunch!! I used minute rice and only chicken soup, my broccoli came out of the freezer. I love having canned chicken ready to use for meals like this! You are far from lazy my friend!

There comes a time when we all get so tired of cooking we have to take a break. Besides, look at all the stuff you canned last summer! I don’t know how you did it! I am the world’s worst cook! And the laziest! If I don’t want to put the dishes in the dishwasher, I don’t. It will get done eventually! LOL

My brother in law is a short order cook , so Hubs thinks he can cook too … Ummmm well I have eaten alot of meals that all the sudden I am full … HAHAHAHAHAA … So Thank you for the recipes and keep on being a lazy cook because I am lazier than you as my hubs cooks ( he has gotten better at breakfast tho) … Thank goodness he works 5 days a week and I get to cook lunch and dinner for myself ..

It’s so funny you had this post today because last night I made a chicken, cheese, and broccoli casserole for tonight’s dinner! Great minds think alike, I guess.
