I had planned to make a sweet potato pie for Christmas dessert but it seems I’m the only one who likes sweet potato pie. Vince wants apple but no one else wants apple. Thankfully, I brought one pie pan so I can only make one pie. That’s my story and I’m sticking with it, even though I’m betting there are at least half a dozen pie pans somewhere in this kitchen.
The popular vote says chocolate meringue pie. My uncle and I both agree that my grandma (his mom) made the most wonderful chocolate meringue pie ever but . . I don’t have the recipe. He said what made her pie so good is that she didn’t use too much chocolate. He said “Everyone else puts too much chocolate”. I know she made it from scratch . . no pudding mix. She cooked the filling on the stove . . and she let me “lick” the pot.
I’ve found chocolate meringue pie recipes online but I don’t know what’s good, what’s great, what’s wonderful . . if anyone has an amazing chocolate meringue pie recipe, I’d love if you could send it to me . . either post it here or send it via email.
Thanks!

I bought an electric personal pie cooker. It makes a tiny pie, just enough for 1 person. It’s only for 2 crust pies however. Also good for chicken pot pie, beef pot pie etc.

3/4 cup sugar, 3 Tablespoons cornstarch, 1/2 teaspoon salt, 2 1/2 cups milk (scalded), 2 Tablespoons cocoa, 3 egg yolks (tempered). Remove from heat and add 1 teaspoon vanilla and 2 Tablespoons butter. Let cool and put into crust. Judy this was my moms recipe she just gave me the ingredients because she knew I had already made pies as I’m sure you do. We like it because it’s not too much chocolate.

This makes 2 pies. 1/2c flour, 1/2c. cocoa, 2c. sugar. Mix together in iron skillet. Gradually add 4c.milk. Cook until starts to thicken, then add 4 egg yolks,(tempered). Cook until thick, add 1t.vanilla. Pour into 2 baked pie crust. Top with meringue made from the egg whites. I use 1/4t. cream of tartar and about 2T. sugar in the egg whites. Bake @ 400 until meringue is golden brown. My Mom’s recipe. Sugar and cocoa can be adjusted for personal preference.

our favorite chocolate Pie recipe. Combine 1 1/2 cups sugar, 1 1/2 Tbps cocoa, 3heaping Tbps..cornstarch and dash of salt.. Beat 3 egg yolks add to 12 oz can milk and cook, stirring until thick. Add 1 tsp.vanilla and 4 Tbs.butter. How can it be bad with 4 T butter and canned milk? pour into pie shell and cover with meringue or whipped cream. Merry Christmas!

I can’t help as our chocolate pie is really fudgy, as in lots of chocolate.
