When I lived in Louisiana, I cooked a fair amount of rabbit. The butcher would debone it for me and I had a couple of great recipes. I never see it in the stores here.
Last night, I wasn’t going to fix dinner because I had fixed lunch, then made cookies, then made the crackers . . didn’t actually make the crackers but poured the oil and seasonings over crackers, and Vince came home early not feeling great so he wanted something to eat. I said “I have rabbit sausage defrosted in the fridge.” Vince isn’t a picky eater but he struggles a bit with some of the things I think are normal. I could tell he wasn’t crazy about having rabbit sausage so I opened a can of soup and in the end, he ended up eating and liking the sausage.
Remember when I used to fix really nice dinners? Not any more! This was jalapeno/tomatillo relish, grainy mustard, crackers, sausage and soup from a can. Bad wife! 🙂

Yep, bad wife! 🙂 🙂 Soup from a can!!!! And I’m with Vince, not eating rabbit. Long, long ago went to the house of friends for dinner, something smelled so good but when she brought that whole rabbit to the table in a roasting pan, I quickly lost my appetite!

My grandmother used to fry rabbit just like you fry chicken. She told me it tasted like chicken to get me to try it…of course since my favorite piece of chicken was the wing, I asked for a wing. I thought my grandparents were going to fall off their chairs laughing at that one! By the time I was growing up, if we had rabbit, it came from someone who grew them for food. When my dad was growing up, the rabbits came from someone in the family going hunting…

It all looks good…no bad wife there! So what if the soup was from a can, you heated it up and were probably the one who brought it home from the store.

When my husband and I bought our first house – we had enough land to be pretty much self-sufficient. We raised rabbits for meat. I was brought up in Lancaster County – so I knew where the food on my table came from, but it was the first time I had ever butchered my own. We lived there 8 years – then moved because we needed better schools for the kids. I used to order my rabbits from Dean in South Carolina – but saw that he’s sold his business. Good thing I still have a dozen in my freezer !
