I’ve been a fan of cast iron cookware for many years. I’m not sure if it’s because my grandma used it so much or because so many cajun cooks use it almost exclusively, but I can remember some of my first pots being cast iron. I didn’t grow up in a cajun family but almost all of my friends had some cajun in their heritage and many had a whole lot of cajun in them – the way they talked, the way they cooked, the way they lived. Southwest Louisiana was a great place to grow up . . in so many ways.
This is something I’ve already shared here but when I was staying at my uncle’s recently, I realized that my aunt, who was very cajun and had not learned to speak English til she started first grade, cooked pretty much exclusively with cast iron and hers was smooth as glass. I came home with a new love for my cast iron cookware.
I don’t know how long I’ve had it but I think I initially bought this Lodge biscuit/mini-cake pan to make small layer cakes. I must have ordered it from Lodge because it doesn’t show up in my Amazon orders, or I think Walmart has it too. I have no idea when or where I bought it but I had never used it so I got it out this morning and used it to make biscuits.
It worked great. The biscuits didn’t stick and cooked very uniformly.
Another Lodge cast iron piece that I hope will be getting lots of use.
You know what I’m thinking? Pioneer Woman’s Tres Leches Cake . . made in these little mini round shapes! But, before I do that, I need to go order the next larger size jeans. I’m going to need them!

When you make the Tres Leches please post recipe and photos. I’m so in on that one!!!!! I, too, love my Lodge cast iron and even the pieces that are not Lodge. Next in line for love is Le Crusette.

Looks good! Nothing better than home made biscuits. Unless you add some sausage gravy on top of them

Hard to believe it but I don’t like sausage gravy. Vince and Chad both love it so I’ve made lots of it but I don’t eat it.
