The day before Thanksgiving, I roasted a pork loin; then on Thanksgiving Day we had turkey and I’ve had about all the leftover turkey and pork loin that I can handle. I was looking through recipes . . the kind of recipes that disguise what you’re trying to use but pretend you aren’t eating.
I used the Tuscan Chicken Fettuccine recipe from the new pressure cooker cookbooks but didn’t use the pressure cooker since the meats were already cooked. I used some of the smoked turkey and some of the thinly sliced pork.
Dinner
Meat, spinach, mushrooms, sun dried tomatoes, cream, fresh basil . . it was pretty delicious. I said to Vince . . this is restaurant quality and he said “much better than restaurants!” It was really good and I used up some of the leftover pork loin and turkey!

My mom made a awesome turkey tetrazzini that she redid the recipie to accommodate my picky sons. She wrote it down and gave it to me!

Must try that! I still have leftover capon from my Fri Thanksgiving. We went to friends house for Thanksgiving dinner.

I don’t cook much at all anymore, mostly because my sweetie is SUCH a picky eater. Vince is a dream…he’s always complimenting your cooking. I cook maybe once or twice a week and of course when I cook things like meat loaf, soups, casseroles that he likes, I double and triple the recipe and put them in the freezer. My best cooking tip is to keep our favorite restaurants and take out places on speed dial!! LOL! We live in a college town and there are all kinds of restaurants.
My daughters are lucky that their husbands will eat whatever the girls put in front of them.

Thanks for the idea .. We had turkey that neither of us liked .. it was a turkey breast (he insisted we have it this year instead of a whole turkey) but it just seemed different, our dog loves it so she has turkey with every meal ….So I do have some leftover turkey frozen that I will try it with .
