More than likely, there’s a world of difference in the induction portable burner and a “hot plate” but I’ll probably always call it a hot plate.
For dinner yesterday I cooked black eyed peas in the pressure cooker . . outside, and fried eggplant on the burner.
I bought two Rubbermaid tubs and moved the pressure cooker, and the air fryer to those. I can use them outside on that table instead of having to use them on my countertop. I only have one little spot in my kitchen where there isn’t an overhead cabinet and I don’t like doing things on the counter that produce heat, steam or splatters with cabinets above the heat source. Cooking out on this table is working out so well.
I did roast a pork loin in the oven. I guess I could have done that in the air fryer but the oven was already hot from having baked bread.
There’s dinner! Pork loin, fried eggplant, black eyed peas and fire roasted Hatch chile peppers.

I went to Aldi’s right after your post about it and they were gone. Sigh. Guess it’s hit or miss there. First time I’ve been to Aldi’s as it’s rather new here.

Aldi’s was out when I went to buy one, but they were expecting more the next day. So, back I went and YAY, I got one!! I haven’t used mine yet, ’cause I had no idea which pans I could use. So, back to town I went to buy a pkg of strong magnets. I have several pans that will work! I can’t wait to try it out.
I have a 2 burner hot-plate that I use often. It’s soooo slow to heat up, and never as good as a “real” stove. But I have a bum knee and when it’s bothering me, I put my hot-plate on a low rolling cart and sit to cook. I have high hopes that the induction burner will be exactly what I need. Thx for posting about it!

Hi Judy! Just a question about the roast pork loin. I noticed it had some sort of crispy looking crust and was wondering how that was done. I looked in your archives and saw a recipe for Sarah’s pork roast. Is that the recipe you used? I have a small pork roast thawing for tomorrow or Wednesday and thought I would like to try something new. Thanks for your inspiration.

You’re going to make me admit to what a lazy cook I’ve become. That’s a little already seasoned pork loin I buy. I think what you’re seeing is the layer where the seasoning has penetrated. There wasn’t really a crispy crust. They’ often $5 at United and one will make two meals for us so that’s about $1.25 per serving . . not bad.

ok……I’m officially hungry!! I/we so LUV eggplant…fixed ANYway! The Instant Pot that resides at our little TX place is always used on a table on the carport. Limited counter space plus the fact that the mess(?) is outside. Now, to get me an induction “hot” plate!!!!!

OH, you guys do eat well at your house! The only things on that plate my husband would eat are the pork loin and chilies. And where’s the cornbread???

I don’t have that particular brand of induction cooktop but I purchased 2 a couple of years ago to put in our travel trailer. We always cook outside when camping and we LOVE ours. Our models allow us to change the wattage so we don’t blow a breaker on our trailer if we have both going at the same time. I’m sure you’ll get lots of use from yours.
