Now that there are just the two of us, making a whole cake or a whole batch of cookies isn’t a good idea. Here’s a blog post I did about making the whole batch of cookies, then flash freezing most of the dough, then vacuum sealing about 1 to 1-1/2 cups of dough . . just enough to make about a dozen cookies. I’ve gotten a bit lazy since then and just scoop the dough into a vacuum seal bag, vacuum and seal it, then when it’s time to bake it, I shape it into balls or whatever. It’s a whole lot easier to do a dozen cookies at a time and not have to shape them all and then flash freeze them before vacuuming and sealing. Lazy Judy . . but it works just as well.
My favorite cookies for this trick are Cherry Nut Slice & Bake Cookies.
When I was cleaning out the freezer yesterday, my cookie bin only had one package of cookie dough and thank goodness, it was Cherry Nut.
It’s time to make more cookie dough and get my freezer stocked up. Warm cookies on a cold night . . not so great for losing weight but pretty darned good for everything else.

When I clean the big freezer which is not frost proof. I line the shelves with towels along with the bottom to catch the drips. Then set a fan on it. Done it about 30 mins. Wipe the inside down, turn it on and food goes back inside. Towels go to washer Learned this a long time ago.

This freezer has something wrong with it and it builds up way too much ice and frost. I got about 10 gallons of water/ice out of it so unless I had way more towels that we even own, I would still have been wringing out water multiple times. All our manual defrost freezers have drain plugs but you have to get behind them to attach the hose and I couldn’t move it. Normally, we attach a hose and let it drain outside and don’t worry about it.
This freezer took almost all day because there was solid ice in the door, between the inner and outer door parts and that all had to melt before I could turn it on and put the food back in. I’ll be happy to see this freezer turn into a cold smoker.

I just took some oatmeal coconut cookie dough out of the freezer to bake a few cookies once my bread finished. Nothing like a fresh backed cookie.

I got a wonderful recipe for chocolate chip cookies that makes a large amount. Everyone loves them, so I make up a recipe, freeze “wads” of dough on cookie sheets, then dump them all in a zip loc bag and take out only what is needed to bake. Husband even does this all by himself when he wants a fresh one….or two. Don’t have a flash freezer, just the regular freezer section of my refrigerator. What size is your flash freezer for home use?
