The fig tree must know the end of the season is near because it has turned into a fig producing machine. Every day I’m getting 4 – 6 cups of figs. With the cooler days, especially early in the morning, the figs are cold right off the tree and I could eat a bucket full but I keep reminding myself how horrible you feel when you eat too many figs!
Yesterday I made a fig cobbler.
We had Blue Bell Homemade Vanilla ice cream and nothing goes better, in my opinion, with warm cobbler than Blue Bell Homemade vanilla! It was so good.
For any fruit cobbler, I use 1 cup flour, 1 cup sugar, 1 cup milk, 1 stick butter, 2 tsp. baking powder, a pinch of salt and 2 cups of fruit.
Preheat the oven to 350°
Melt the butter and pour into a baking dish.
Mix the flour, sugar, milk, baking powder and salt. Pour into the melted butter. Do not stir.
Pour the fruit on top, pouring it as evenly as possible over the batter.
Bake for about 35 minutes or until the top is getting brown.
Simple as that!

I have a recipe that has you pour the batter over the top, and then add (I don’t remember how much) sugar on top. It makes a crunchy sugar topping (very yummy). Your method looks easier, though. I’ll have to try it…

At my wedding shower in 1963, attendees wrote simple recipes on index cards (do they still exist?) and this was one that a neighbor gave me. I have used it ever since. I love to add brown sugar and cinnamon on the top of it.

Thanks for the shortcut to a simple cobbler. I love being able to throw something together that seems so simple and have it turn out tasting delicious. Now if only I had some good fruit on hand to try it today! Off the the store I go tomorrow.
