Two days this week . . and there’s still one more day to go and I wasn’t here on Tuesday, so what I’m really trying to say is . . Two out of three days this week, I have totally forgotten to fix lunch. Time just got away from me. I’m going to get fired if I don’t do better! 🙂
Today’s lunch menu was baked potatoes with leftover grilled chicken and coleslaw. I woke up this morning wanting clam chowder. Honestly . . my eyes popped open and the first thing I thought about was clam chowder. I wasn’t even out of bed yet when I was thinking I’d run down to The Runaway Train and get their clam chowder. But . . that would have involved taking off my pajamas, putting on decent clothes, combing my hair and putting on some amount of makeup so I decided to make it myself.
By 7:30 a.m., the clam chowder was done. I planned to put the potatoes on to bake about 10 or a few minutes after 10. I sat down and started doing something else . . talking to a friend on Facebook. I looked at the clock and it was 10:30. Potatoes weren’t even washed and Vince would be home at 11. I jumped up, ran into the kitchen, scrubbed the potatoes, put them in the air fryer and had lunch on the table at 11:10.
Instead of stirring up coleslaw, I served leftover rice salad.
The clam chowder was delicious. Glad I made it but dang, I have to start paying more attention to time. At this rate, Vince is going to walk into the house one day and I won’t have anything fixed for lunch . . that will not be a good thing!
