We all know the importance of healthy eating, right? For the most part, I try to fix balanced meals. We also are aware that as folks get older, they seem to cook less and are happy to live off junk food. This is never good . . at a time when failing health can bring the old folks down so quickly, we should all strive to pay attention to what we’re eating.
Vince and I sat down to dinner tonight and I thought . . we’re soon going to be the old folks that someone sticks in a nursing home because we aren’t eating right!
Meatballs, cucumber dip and boiled peanuts! Poor choices but pretty yummy!
I hadn’t planned to cook dinner. We have our main meal at lunch and then Vince will usually eat leftovers or a sandwich for dinner. Today Vince had lunch at work and it wasn’t something he liked and I knew he was hungry so I said “I can heat up the meatballs and make cucumber dip” and he noticed a can of boiled peanuts so . . that’s what it was.
Please don’t come get us and take us to the old folks home. I’ll do better tomorrow! 🙂

Never had a boiled peanut. In fact never heard of that. Very interesting.

OOH boiled peanuts are so good!!! One of my favorite snacks growing up but don’t live where they’re very popular now. So good when they are hot and salted!

Most of the grocery stores have them in cans even here, where they aren’t popular.

I’ve never heard of boiled peanuts. My dad had a wholesale produce business and he would roast and package peanuts, but never boil them. Is this a southern thing? I’m from New England.

It probably is a southern thing but not all of the south ate them. I grew up in Louisiana and had never had them. As an adult, my friend from Mississippi loved them and the first time I ate them, I thought they were awful. Vince had them growing up in FL and then as an adult in GA and . . if it’s food and on my table, I’m going to eat it so I ended up learning to like them.

I’ve seen boiled peanuts in the store, but I’ve never tried them. It is interesting to see what they actually look like.

If you’re used to roasted peanuts, be prepared for them to taste really weird! But, they grow on you.

So they are boiled in the shells? And you eat the shells? I’ve heard of boiled peanuts for years but never dreamed they were not shelled first?

Yes, boiled in the shells. We don’t eat the shells . . not sure if anyone else does.
