Remember that part of the extra grilled chicken breasts from yesterday were going to be served over salads?
Can you see the chicken breasts sliced up on my salad at about the 7:00 position? It’s just a mixed greens salad with carrots, boiled egg, black olives, tomatoes and cucumber, with my homemade Ranch dressing, sprinkled with hemp hearts. I heated the chicken breast in the air fryer before slicing it.
Also, the little round pieces are fried goat cheese, which I love! I simply slice the cheese, dip in a beaten egg, then in panko, then fry in a little butter or olive oil. There was a time when I didn’t like goat cheese but now, it seems I can’t get enough of it.
On the little saucer is a bit more of the Golden Rice Salad.
It was a great lunch and quick and almost no mess!

I might eat goat cheese if it was fixed like that. 🙂

Looks yummy. Need to try the goat cheese. I actually cooked last night so had yummy leftovers today. Baked salmon and kale salad. The salad was a cheater from a bag. Had a baked sweet potato last night but didn’t think to buy more than one. The rice salad looks yummy but no eggs for me.
