The other day when I cooked the pulled pork, it all went into the fridge until I was ready to use it. In this post, I explained how I cooked it. Here’s what I’ve done to it since cooking it.
This morning I took it all out of the fridge. First, I chopped the onion (I actually used two onions), the bell pepper and three jalapeno peppers and sauteed them in an olive oil/butter mix.
The pan juices had been in the fridge so the grease would rise to the top.
Most of the grease, but not all, was scraped off and added to the pot with the onions and peppers.
Once all the juices had melted, I added the meat.
Once it was heated, I tasted it to see if needed additional seasons. It did so I added a bit of cumin, salt and Slap Ya Mama cajun seasoning.
For lunch today, we will have this meat on a flour tortilla with a bit of shredded lettuce, chopped tomatoes, cilantro and avocado.
Tomorrow, we will have this meat on a baked potato with sour cream (homemade Greek yogurt actually), butter, shredded cheddar cheese, black olives and chopped jalapeno pepper.
The rest of the meat went into vacuum seal bags, 8 oz. per bag.
There’s 8 bags of pork there. These type bags of meat are great for those days when I have no idea what I was going to cook, or when I’ve already cooked a big lunch, didn’t plan to cook dinner and Vince wants something. There’s so much I can do with this kind of meat.
- Baked potatoes are super easy in the air fryer (or microwave but I’m not a fan of the microwave). Slice open the potato and stuff with heated pork, chopped red onions, black olives, sour cream, jalapeno, cheese – whatever you want to add!
- Pita pockets are also super easy to make. For those I would saute sliced onions, sliced bell pepper and bigger chunks of jalapeno pepper. Add with cheese or the guacamole salsa.
- Shepherd’s Pie. I love shepherd’s pie made with roasted shredded pork. It’s so easy to make. I spread the meat in the bottom of a 9″ baking pan, add a bit of shredded cheddar cheese. Toss on some frozen corn and frozen green peas, add a little Slap Ya Mama. Make homemade mashed potatoes and put them on top. Bake til everything is hot, sprinkle a little more cheddar cheese on top. Yum!
We’ll get at least 10 meals out of that one big pork butt that we bought on sale for about $8. It will take a few other ingredients to create the meals but the cost is really low compared to eating out or buying frozen meals. Having already cooked meat in the freezer, ready to use . . I love that!
