Probably after being gone for my retreat last week, I’ve been tired this whole week and I just feel like I’m running behind. My allergies are about to get the best of me and I’m just running on empty! I haven’t touched my knitting needles since our knitting group met on Tuesday morning.
Vince didn’t come home for lunch yesterday and I was sure I could get a nap but by the time I packed up Addie’s box to send her, went to the Post Office, went to the eye doctor, went to a couple of grocery stores, over half my day was gone and I had too much to get done to be able to take a nap.
Today Vince wasn’t supposed to come home for lunch so I said to myself . . I’m going back to bed when he leaves for work and I’ll sleep for a couple of hours and maybe I’ll be caught up on my rest!
With it getting daylight later, which I love, it was after 8 a.m. when I got finished doing my outside chores. The bed and my comfy pillow were calling! I got a load of laundry going, fed the dogs and cats, checked email, had breakfast and was just fixing to go to bed about 9:15 when the phone rang . . it was Vince! He said “I will be home for lunch! Meeting is cancelled.” I had to bite my tongue to keep from saying NO!! but I said . . ok . . and then I said to myself . . I have 1 hour and 45 minutes to get lunch on the table . . and nothing defrosted.
I could have quickly fixed venison stroganoff from canned venison but I have that on the menu for this coming Monday and you know how hard it is for me to deviate from my menu! Crawfish! I have plenty of frozen crawfish and they’re quick and easy to thaw.
We love crawfish etouffee so I made a quick, light roux and got the etouffee going.
By the time Vince walked in, we had etouffee, hot rice, salad and bread! The best part . .
We have crawfish etouffee for Saturday’s meal!
Tomorrow I’ll finish up the pork that I roasted earlier this week and we’ll have that for lunch tomorrow and it will also be Sunday’s meal so my cooking is about done for a few days!
Now . . I’m going to take a nap!
