It isn’t exactly a compote but close enough.
Vince wanted brie and about the time I put it in the oven, he said “Remember when you made something with figs and nuts and we put it on top of brief?” Yes . . I remember. I ran out and got some figs, then opened a jar of fig/blueberry jam I made earlier this year, chopped some jalapenos and sauteed those in a bit of butter, toasted and chopped walnuts, added a bit of almond extract and . . we had our topping.
You could use any jam or jelly and any fruit

Brie and fruits would be on the menu everyday if I had my way 🙂

Have you tried dehydrating figs and how did you use them? Have you tried freeze drying food and which machine did you use? Have a wonderful day!
JudyL says
I don’t like dehydrated figs. I think it has to do with the seeds. I do not have a freeze dryer, only a dehydrator.

Brie confuses me. Are you supposed to eat the rind or not?
JudyL says
I think you eat it if you like it and don’t eat it if you don’t. I don’t eat it and if it’s very fresh, Vince will eat it.

Brie with cranberries and pecans is awesome (and, yes most definitely, I eat the rind!).
