For some reason, I seem to be wanting salads every meal these days. Some are more healthy than others but they’re all delicious. Here are two good salads I’ve made the last few days.
This one was yummy and so quick and easy because . . it called for boiled and shredded chicken breasts but I had this:
Opening a jar of already seasoned chicken, shredding it .. so good!
We liked this salad a lot.
The second salad I made was good but the dressing needed some tweaking.
I would make this again but I would probably add mandarin oranges and maybe peanuts instead of the chow mein noodles. All I tasted in the dressing was the rice vinegar. The dressing needed something else or maybe less vinegar. I left out the pasta .. didn’t seem like it would add a whole lot to the flavor.
For lunch today, we’re going to have leftovers . . a combination of the two salads and I’ll use homemade Thousand Island Dressing.

Pot your washed fresh veggies into a clean pillowcase. Take it outside, and spin it around over your head a couple times to get the moisture out. Or spread them out on a clean bath towel and gently roll them up. Pat a couple times, let sit for a few minutes. Unroll. or close the pillowcase top with a rubber band and drop it into the washer. Set to spin and stand there and let it get going and then stop the machine. Save your sanity and paper towels. Love the recipes!

I made the Thai Chicken salad last night, it was very tasty. I don’t like peanuts, so I subbed in slivered almonds and almond butter in the dressing and it worked well.
