First, when I clicked on Pressure Cooking Today, I saw that Barbara has a new book coming out. It’s The Electric Pressure Cooker Cookbook and it’s available for pre-order at Amazon. At first, I thought . . I can get the recipes off the internet but there’s nothing like sitting down and thumbing through a real cookbook. I have made dozens and dozens of Barbara’s recipes and have never once been disappointed. So, my copy is on pre-order and I ordered one for Nicole too.
The first recipe recommendation: My friend, Judy, had posted on Facebook the other day about a macaroni salad she made and it was a big hit. It’s another recipe from the Pressure Cooking Today site – Amish Macaroni Salad. I was a bit skeptical about putting pasta in the pressure cooker but I figured if Judy’s family loved it, we would too. I used elbow macaroni because that’s the first thing I grabbed. I did not cook the eggs with the macaroni. I have chickens and I see what part of the chicken those eggs come from so I cooked the eggs first, scrubbed the cooker and then cooked the pasta.
Sorry I don’t have a picture but it was delicious! My only suggested change to the recipe is . . double it! We barely had enough for leftovers. Vince asked yesterday if I would make it again. I said yes and he said “soon please!”
The other recipe I made was Pioneer Woman’s Baked Beans. These really are the best baked beans. Even the picky eating visitors loved these beans.
I love good food and easy recipes and I hope you like these two recommendations too.

I bought my pressure cooker last year and it was all because of you! It went on sale on Amazon and I thought, “now is the time to try it!”. You would not believe how much I love it and how much it has changed how I cook. I’m surprised that you are just now trying a pasta recipe! I made that salad last week and like ya-ll, we devoured it. I kept going back to the fridge and stealing spoonfuls of it. 😉 We’re also fans of those baked beans.

I made the Amish Macaroni Salad a few weeks ago, and everyone loved it. I haven’t found a recipe on Barbara’s site that we haven’t loved. I’ll be buying her book for sure!
