It was one of those weekends when it seems I never stopped but have a hard time thinking of what I did! Seems like forever since I’ve put much effort into cooking but I did try a few new recipes this weekend.
I did make the Spring Pasta Salad. I think the only changes I made were using fig balsamic instead of regular balsamic and the “non-Italian-south-Louisiana” girl in me had me shaking a heavy dose of Slap Ya Mama in there. The recipe turned out great . . made a wonderful cold salad to have on a hot summer day. We talked about how good it would be to add sliced grilled chicken or boiled shrimp and make it a one dish meal.
I also made the Bolognese Sauce. I’m not a fan of red sauce so I’m probably not a great judge for this recipe. Vince tasted it and said “You should like this – it doesn’t taste real tomato-ey”. I did add quite a bit of mixed Italian Herbs. I made a double batch of this and froze most of it so that’s one meal I don’t have to cook when Chad is here.

I’m guessing the recipe used a bigger pan than I did! This is the recipe I followed and didn’t change anything.
I will definitely fix this when Chad, Nicole and Addie are here. It was delicious!

Been wanting to try this pasta dish since you posted it 3 months ago! The stars all aligned tonight and I made it and we both really liked it. I did add fresh mushrooms sautéed first along with some green onion, then the fresh asparagus – while the tomatoes were marinating and made the dressing. Then at the end sauted some shrimp and added all to warm pasta (I used shells) with the dressing poured over. Yum! I did use the white balsamic as the original recipe called for with olive oil and some Dijon. Will definitely be making this again.
