Sometimes just finding the right inspiration is what gets me motivated to cook. This evening I came across Proud Italian Cook‘s website and it’s looking like I want to make every recipe on there! My grocery list is long but I think it’s going to be a fun weekend of trying new recipes!
She has a ton of amazing looking salads that will be so good on hot, summer days. Also, a lot of the salads are refrigerated so for those whose husbands aren’t very adventurous, you could make these salads and eat on them for a few days.
I think I haven’t mentioned that I have visitors coming soon . . one of whom is an adorable little girl and, I’m sure there will be a monkey along for the ride.
Having them coming is what had me searching for recipes I could make ahead and have ready to serve so I don’t waste too much time in the kitchen.
Anyway . . check out the recipe site and see what you think! Down below where I have the Pinterest box, you can see some of the recipes I’ve pinned.

Hi Judy,
Have a great time visiting with the kids. Great idea to cook ahead and spend the time with them.

Just serve them Aldi Hot Fudge! OH mY word! I opened my one jar last night after dealing with 3″ of rain and wind in less than an hour and the garden being a mess and it was just the thing I needed and OH so good! I’m going back to get more this weekend! I hope they have some left. Thanks for the recommendation! ENJOY their visit!

Have fun with the family! It’s been a while since they have come to visit. I went to the Proud Italian Cooking site, but since I grew up in a big Italian family and can’t remember much, if any of these ingredients (except pasta and tomatoes) in our diet, I was a bit disappointed. This must be the modern California style cooking approach to Italian food. But, do post what you make, and what was a hit with the family.

Have a great time with your visitors! I have my 3-1/2 year old granddaughter for one more week before I return her to her parents in Georgia. She has been with us for 8 weeks going to camps and taking a vacation to see her parents. The time has flown by and we really don’t want to take her home. (She already told me that I can’t cry when she goes home.) I definitely have to figure out a way to retire soon so that we can move and see them much more often.
