You know how much I hate leaving home and I already had to go to town this morning to take Rita to the vet. I needed just a couple of things from the grocery store but I couldn’t leave Rita in the car so I had to bring her home, fix lunch, then when Vince went back to work, I went to town. Vince said “If you’ll wait til this evening, I’ll go with you!” No! I sometimes like to do the grocery shopping by myself. I feel like the whole time I’m in the store with him, I’m saying “No! We don’t need that!” or “No . . one will do. We do not need six!”
It wasn’t just about the grocery store . . I needed gas and wanted to drop off some lemongrass for the Filipino restaurant.
On our menu for Saturday is Rosemary Lemon Grilled Chicken. I swear .. I read the recipe several times and for some reason, I thought I needed chicken breasts with the skin. Who knew the grocery store doesn’t even have those any more! Not fresh. Not frozen. They had legs, thighs, and wings with skin . . but no breasts.
They had some nice plump chickens with a sell by date of tomorrow that were marked down to about $2.00 each and the nice lady suggested I buy those and use the breast. That was probably less than buying just breasts anyway but I detest cutting up a chicken.
I did it! I bought two chickens, came home and cut them up, seasoned everything and will grill it Saturday. No cut fingers. I would be happy if I never had to cut up another chicken. Because the sell by date is tomorrow, I’m going to stick them in the freezer, already seasoned, and then take them out Saturday morning and proceed with the recipe.
As soon as I looked at the recipe again, I realized it calls for boneless, skinless chicken . . which was everywhere in the grocery store. Darn it!

See, if you’d have taken Vince to the store, you’d have came home with the 2 whole chickens, and boneless/skinless breasts and a bunch of other stuff you had no plan to purchase.

I’m with you on cutting up chickens! Uh-uh, not going to happen. I avoid touching all meat, though. Looks delicious, and if the skins come out crispy, it will still be tasty. =)

What is it with not getting bone in and skin on chicken breast….I live in California and and I can’t find them anywhere…..I used to buy at Costco….they don’t even have them anymore…..

sounds like you used a knife to cut up the chicken, have you tried poultry shears? cut off the wings & legs at the joint, then either side of the spine, then straight through the breast. poultry shears make it super easy & quick
