My apologies for not posting this recipe sooner. I thought I had posted it and when I went to make the bread again yesterday, I couldn’t find it and didn’t want to post it again in case I had already posted it and just couldn’t find it but then when a couple of readers asked for it, I figured I had never posted it and, sure enough, I found it in my “drafts” folder.
When I realized I was going to have squash coming out my ears, several readers shared their favorite zucchini recipes. The zucchini bread is the best I’ve ever tasted. I “licked” the batter bowl and as soon as I tasted it, I knew I should go out and plant more zucchini.
Here’s the zucchini bread recipe:

2 Cups sugar
1 Cup vegetable oil
1 tsp vanilla
8 ounces cream cheese, softened
2 Cups All-purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon, I always add more
1 tsp salt
1/2 tsp ground nutmeg
2 cups chopped walnuts (haven’t ever added these, but I am sure they would be yummy)
2 cups shredded zucchini
Mix eggs, sugar oil and vanilla, add cream cheese
Mix dry ingredients and on low speed add above ingredients
fold in walnuts and zucchini

Will you please share the recipe for the cake? Thank you! Also, I have one zuchinni planted, wish I had room for more. Its too hot, IMO, to bake and I’m thinking of shredding it when ripe and freezing in amounts called for in recipes. Think that’ll work? Thanks!
