I love Corn and Black Bean Salad. It’s just black beans, corn, bell pepper, red onion, cilantro, avocado, lime juice, chopped tomato, green onions and seasonings.
We had leftover corn from the crawfish boil so I thought . . that’s nice and spicy! I’ll cut it off the cob and use that in the salad instead of frozen corn.
It’s so pretty! And it tastes so yummy. I love it. I think I already said that!
We had the salad along with our crawfish bisque (more leftovers from the crawfish boil) for lunch yesterday.
We both agreed that there’s nowhere in town where we’d rather eat than at our house.

I make a variation of that salad to take to potlucks. People really enjoy it. So do we!
