One day last week I was working in the garden and was getting hungry. The urge for a BLT kept getting stronger and stronger. I knew I had bacon and I had tomatoes and bread but I didn’t have any lettuce. The lettuce in the garden is almost ready to pick but not quite. I went in the house and saw that I had cucumbers. No lettuce? Add cucumbers!

So, I had a bacon, cucumber and tomato sandwich and it was yummy!

When I get a subway sandwich that is cold, I always ask for cucumber slices and spinach instead of their shredded lettuce (which always falls off anyway before you can get the sandwich in your mouth).
