This is one of those “do as I say, not as I do” posts. I needed to make a double batch of Green Chile Pork Carnitas and didn’t want to take the time to make it twice.
Green Chile Pork
Just a little over the “Max Fill” line. As I thought about whether I should do it or not, decided to do it and took a picture, I thought about the criminals who video them committing a crime and post it on the internet. I should not have taken a picture and if something happened, I would say “I have no idea what went wrong!”
I figured I’d just keep the dogs out of the kitchen and the worst that happens is it explodes and I might finally get the kitchen ceiling painted.
It’s done now and there was no disaster but I probably won’t do it again.

Definitely would have done it. It was just a teeny pinch over the line….takin a walk on the wild side. And I have two pots. I could just do two side by side. But I would still have done it all in one pot.

I have 2 Instant Pots and 1 Cuisinart but that is one dish that makes the gasket smell like carnitas forever so it was all in one pot or use the same pot twice and take twice as much time.
