Vince wasn’t supposed to come home for lunch yesterday. He had something he had to do and I was pretty happy to be able to sew all day without having to stop and fix lunch.
It was about 10:20 a.m. when I sat down to email him about something and when I checked my email and had this:
Oops! Nothing was planned for lunch. There were leftovers I could have heated up but we have our main meal at lunch.
I grabbed the first jar of home canned food, which happened to be Chicken Jambalaya, which was canned in April, 2014.
I rushed back to the house, put rice in the pressure cooker, opened a can of green beans and opened a jar of picked red cabbage.
When Vince walked in the house at 11:00, lunch was ready to be served!
The canned chicken jambalaya is one of my favorite canned meat dishes. It was delicious and that makes it worth it to do all the work to have canned foods ready to heat and serve.

I would have enjoyed this post a lot more if there hadn’t been a giant toenail fungus ad in the middle of it, right by the jambalaya. Yuck!
