There are so many cooked breakfast foods that I really love . . of course, there are eggs cooked many ways, but there are waffles, pancakes, French toast, hash browns, grits, biscuits . . I could have breakfast foods all day and be happy. My favorite breakfast food, at least for the time being, has to be migas.
We so rarely go out to eat and the other day we had to be in town early and I asked Vince if we could go by the Mexican restaurant and get migas. We did and our bill was $26 .. not counting the tip. I understand about the cost of food, building, overhead, employees but $26 for breakfast?? We surely couldn’t do that very often.
Migas takes a little more time to make than most breakfast dishes I make but it’s so worth it.
Don’t panic. All the bacon wasn’t for breakfast. We were grilling burgers and putting bacon on the burger and I almost always fry up extra bacon for baked potatoes or to crumble over a salad.
I ran out to the greenhouse for tomatoes and jalapeno peppers. Then I stopped by the coop to get eggs. Then I went to the garden for cilantro.
Vince rolled his eggs up in a flour tortilla but I had mine with sliced avocado.
Just seeing the picture makes me want it again.

So migas is essentially an omelet? With a more Mexican flavor? Gee, we didn’t know quite what we were eating! Love it here too.

Migas are essentially scrambled eggs with peppers, tomatoes, cheese, onions etc and toasted corn tortillas in the eggs. They are delicious…but of course everyone has their own individual recipes. Migas plate for breakfast here in Johnson City costs about $7 plate.
