I love the regular sourdough recipe I use but it takes forever to make. It isn’t hard but if I end up doing anything during the day, I get off track plus I have to keep two clay baking pans handy and I just don’t have room to keep them in the kitchen.
The other day this recipe came through my email and it looked easy.
It was much easier than my regular recipe. I ended up not letting it rise long enough. The kitchen was cold . . I should have used the proofer but didn’t.
It was great. It will be better when it rises more. I’ll try this again and this may become my sourdough recipe of choice.

Those are lovely boules! They look nice and crackly on the outside. Baking them “free-form” on a sheet pan is a bonus.
