It’s been about 35 years ago since a friend gave me a recipe for Spinach Meatloaf. It was an amazing recipe and sadly, I lost it along the way somewhere. It was written on a scrap of paper . . before the days of saving recipes on the computer or in the cloud.
I’ve searched the world over (via the world wide web) and have not found the exact recipe. I remember that the meat had various normal meatloaf type ingredients in it. The filling had cottage cheese, among other things.
I’ve been wanting meatloaf and I’ve been wanting spinach meatloaf. There are many recipes online but I didn’t see anything that looked like the exact recipe so I just made one up. I would have used cottage cheese except we’ve been on a cottage cheese binge lately and we eat it as soon as I bring it into the house.
Because we eat our main meal at lunch and because getting lunch ready for 11:00 is sometimes a struggle, I try to do as much as I can the night before. Last night I mixed up the meat and the spinach and put it in the fridge.
This morning I spread the meatloaf out on parchment paper, topped it with the spinach mixture, then topped that with some sauteed onions.
It was rolled up and I ended up with one for the freezer. I wrapped it in plastic wrap, stuck it in the freezer. Once it freezes, I will vacuum seal it. It’s all rolled up and ready to be plopped into a loaf pan and baked next time I’m hungry for a meatloaf (or too lazy too cook).
After it was baked, I added a sauce of ketchup, brown sugar and soy sauce. Sliced Swiss cheese was added to the top and it was baked til the cheese melted.
Served with green beans, salad and crusty bread . . it was delicious and just what I had been wanting.

I would like a bit more of a recipe. Please! It does sound good & my husband does like meatloaf.
