During the summer, when I’m too busy outside to mess with bread, I don’t keep my sourdough starter going but during fall and winter, when I’m baking a bit more, even though bread doesn’t have much of a place on our healthy eating plan, I revived sourdough from the freezer and it’s really active.
I had to laugh when I looked at the picture. My phone was on the charger in the kitchen and I could barely reach the position for taking a picture without unplugging the phone. I should have moved some of that stuff out of the picture but then I thought .. this is my life! There’s two bottles of champagne for New Year’s. Both these are fairly sweet because some of us like sweet. There’s dry in the fridge already . . mostly it’s the guys who like the dry. On the right side of the double decker bowls of sourdough are the jars of very active starter. I keep begging my friends to take some and I do have a couple of takers.
The recipe we love for waffles is King Arthur’s Classic Sourdough Waffles. It’s very easy to half and half of the recipe still gives us enough waffles to stick in the toaster the next day. Sourdough waffles for breakfast today!
For the bread, this is a great beginner sourdough bread from The Kitchn. The leaven is started a couple of days before I’m ready to make the bread.
Sourdough is pretty amazing stuff. I love messing with it but . . I’m probably not really normal! 🙂

I wish I loved close enough to take some of that starter off your hands! My house is a little too chilly to get a good batch of starter up and running right now, and my first batch was bumped off the counter by a curious cat when we weren’t home.?

I bake a single loaf sourdough bread twice a week right now. My house runs cool (mid 60’s) so hubby set up a cooler with a heating pad in it for a proffer and makes the bread and me happy happy.
I also use the KA waffle recipe and freeze the extras for the toaster.
I have used the starter in a cobbler(pretty good), cornbread (did not care for it) Sweet roll (this one has possibilities) and a Fresh Cranberry Loaf (I am still working out the details for this one).
