There are some things that I always keep on hand in jars and try to never be without. One of those things is canned chili. I love my chili and can’t imagine having to eat storebought canned chili. It isn’t like I’ve never done it, nor would I starve before eating it but I prefer my own chili. We don’t get a lot of chili eating weather here so we have to take advantage of every cool day we get. Chili with tamales is one of my favorite cool weather meals .. next to gumbo, of course!
Over the weekend I realized we had used the last of my canned chili. I mentioned it to Vince . . probably sounded in a panic over not having any more chili. We were in United and they had big packs of ground beef . . buy one/get one free, so we bought 10 pounds of ground beef and I made chili this morning.
That’s 9 of the 1-1/2 pint jars and 3 pint jars. The 1-1/2 pint jars are great for chili because it gives us enough to have chili for a meal, and then enough leftover to put on top of baked potatoes, french fries or tamales.
It was so windy (still is) that I couldn’t do the canning out on the porch and had to bring the big canner inside. Now that I’ve gotten used to doing it outside, I really don’t like having the canner going inside the house but, on a windy day, it’s too hard to do it outside so the operation has to be moved inside.
I’ll wait on making more til I get some fresh ground venison and make at least one more batch. I’d like to have about 30 of the 1-1/2 pint jars filled with chili.

I’m not a big fan of any chili but the chili I DO like is from Wendy’s!!! I’ve found a recipe online that is almost exactly Wendy’s recipe so I make a big batch of that and freeze it in small batches. If I run out, I can just run up to the local Wendy’s and get it! LOL And MAN, it HAS been windy. Just about all the leaves are down now..still a few clingers.

I remember when my mom, grandmother and great aunt would go to a professional canning kitchen every year and make over 100 cans of chili every year. I wonder if places like that are still out there. This was easily 40+ years ago. They did a date “pudding” too that was more like a cake.

So, where’s the recipe? My dad made some of the best chili but he never had a recipe. I haven’t been able to duplicate it.
