Almost my favorite part of Thanksgiving is having turkey bone soup. We went to a friend’s house yesterday and they know I love getting the bones so I brought them home and simmered them with onions, celery, bay leaves and carrots. After they had simmered several hours and cooled down, the broth was strained and I ended up with 3 quarts of condensed broth. There was a little meat left on the bones so I picked that off and it will be added to the soup.
This morning carrots, celery and onions were lightly browned.
Once the broth was added to the pot and seasonings were added, it will all simmer for a while, then the pasta will go in.
We will have turkey bone soup, along with sandwiches or salads for several days!

I like to have barley in my turkey soup, it’s one thing my mother always put in. Now we also add some alphabet pasta. I thought I was being silly but I think it is fun. Seeing you use it brought a smile to my face.

I haven’t made my turkey soup yet, but it’s on the to-do list for tomorrow after my family leaves!

Lots of leftover turkey at our house, too. I boiled down the carcass, removed the bones, and added curly noodles for turkey noodle soup. Delicious!
