The other day I had spinach out for a salad but it wasn’t exactly what I wanted. There were brussels sprouts in the fridge that I needed to use so I decided to combine them and make a salad.
After cutting the brussels sprouts in half, I drizzled them with olive oil, then added some Slap Ya Mama seasoning. They went into the oven to roast and once they were almost done, I added some walnuts and dried cranberries and continued roasting for a few minutes.
After the brussels sprouts, walnuts and cranberries cooled for a few minutes, I put them on top of a bed of spinach.
For the dressing, I used the blueberry/yogurt dressing I had made and topped it all with some crumbled bacon.
It was a bit different but very good and fairly healthy and quite filling.
